We developed a compact device to quickly measure the melting temperature of pork fat.

problem

Pork fat is one of the most popular products of meat processing industry but different types of meat products require different types of fat. Type of fork may be determined by its melting temperature however errors in classification may cause defective production. Measurement of melting temperature used to be a multi-step, time-consuming process that was performed in the laboratory and took up to several days. It was necessary to simplify and speed up the process without prejudice to the measurement accuracy.

The team of Uniscan Research has developed a compact device that was able to measure fat melting temperature quickly and easily.

Having tested a number of different methods, we chose the optical method for fat melting temperature measurement. The measuring device makes it easy to take a sample for measurement from unprepared and even frozen fat.  

 

Pork Fat Measurer

 

To measure the temperature, one has to sink the blade into a piece of fat, take a sample and analyze it; the melting temperature would be displayed on the device screen in 7 to 10 minutes. This obviates the need to prepare pork fat for measurements and equip a testing laboratory.

The measuring results are stored in the device memory and may be transferred to a computer.
